carrot pie with apple and goat cheese

 here's a breakfast dish we enjoyed at dinner last night.  
take 8 carrots and boil for 8 minutes.  halve lengthwise.  
grease a 9" removable bottom tart pan.
 slice a tart apple and an onion (or half a large onion).
on a floured surface, roll out room temperature puff pastry.  
press into tart pan, cover, and put in the refrigerator for 1/2 hour.  
preheat the oven to 350 F.
 place apples and onions into pan, with carrots arranged in a spoke shape on top.  
in a bowl, combine 1/2 cup plus 2 tablespoons of carrot juice with 3 eggs and 1/2 cup creme fraiche (i used full-fat sour cream instead).  salt and pepper.  

then crumble 4 oz of goat cheese between the carrot spokes.  add egg mixture.
 serve with salad in the evening, fresh berries in the morning.  

i put cinnamon, sugar, and extra sliced apples with a little butter in the remnants of the dough, and rolled them up and baked them, too.  happy children.

  5. Hi Noreen, thank you so much for the mention. We've just got back from being away as it was a long weekend here in Australia for the Queens Birthday. This tart looks delicious, I wouldn't have considered cooking carrots in a tart till now. Definitely going to give this a try. Off to have a look at your sisters blog now. xx

    Nice to see you do a food post. Great stuff indeed.
    Love everything EXCEPT adding sugar, especially for kids! If the apples and carrots are organic they should provide enough sweetness.
